My daughter has just discovered lasagne (thanks to Garfield) so I think I'll attempt to make a vegetarian version this evening.  I have made lasagne a few times before, but not since I have had kids as it takes too much preparation time. They're older now and tend to keep out from under my feet these days though.

That would be a good idea! We ran out of those mushrooms my brother in law brought me from Patagonia that were great for risotto.  :(

My risotto was the nuts! even my daughter ate all her dinner.

I really have to cut down on my portions though..

As I had to work until 10pm last night (from 6.30pm), I knocked up mince beef and onion pies with mash and veg for the family before I left, and prepared a spinach pizza with chilis and stilton (yes, I said stilton) to be thrown in the over for when I got home.  I have never had stilton and chili together before and guess what.. it was the nutz!!

Spinach and ricotta manicotti. One of my favorite dishes. It's a lot of work but I make a batch and then freeze some of them.

Veg (I hate cauliflower, but I ate it), roasted pork shoulder, homemade mashed potatoes & gravy. Mango w/ salt, chili and lime seasoning for dessert.
