Chicken and bbq sauce sandwiches.

Today it was a bit more healthy as the chicken was prepared fresh rather than can style. That being said, it was essentially the same dinner as last night.

Maybe you could try another sauce. I bet it tastes like a whole different meal.

I had roast vegs and sauteed swiss chard.  Salad first w/mixed lettuce, apple, avocado & cucumber.

Strangely when I eat leftovers there are more dishes to wash than if I had cooked dinner.  ???

Shake and Bake Pork Chops

Black Beans & Brown Rice

my brain must be away on vacation because I forgot to spray the pan before putting the chops in the oven. Shake N' Bake anything used to always taste great when I was kid. Not as amazing as an adult now.

I am tired of cooking dinner.

salad, followed by rice and roast cauliflower.

I forgot to eat lunch until 4, then it was toasted olive bread w/honey turkey that was on sale at Safeway, mustard and mayo.  I was stuffed, even though it wasn't a very large sandwich.  After that, I didn't have such an appetite at dinnertime.

Since our return I've taken to cooking household Caribbean food.  Things like peas and dumplings, dasheen, yams, fish in browning with carrots and onion, and some rice with saffron.  It's not far off what I was getting in St Lucia but sourcing dasheen is difficult and expensive, so most of the time I substitute it with cassava.

I've yet to get the portioning right as I'd some left over after feeding the 5000.
Don't put off until tomorrow, what you can put off until the day after.

There is an exception to every rule, apart from this one.

I've never tried dasheen. I've seen it in markets in Brazil but never in my country. Oddly it's unusual to find cassava (the tuber) in markets where I live but you can easily find cassava starch/flour.
